Veggie Pizza Muffins
Serves 1
Approximately 325 calories for entire recipe.
1 teaspoon olive oil
½ cup sliced fresh mushrooms
1 cup fresh spinach, chopped
1/8 cup diced onion
1 English muffin, split and lightly toasted
2 tablespoons pizza or marinara sauce
2 tablespoons grated lite mozzarella
1 tablespoon crumbled goat cheese or feta (optional)
1 tablespoon fresh chopped tomatoes
1. Preheat the oven to 450 degrees.
2. Heat the olive oil in a nonstick skillet and sauté the mushrooms, spinach and onion for 3 minutes. Remove from the heat.
3. Top each English muffin half with half of the pizza or marinara sauce, mozzarella, sautéed veggies, goat cheese, and chopped tomatoes.
4. Bake for 6 to 10 minutes.
