4. Cook leftovers.

If a recipe says it makes four servings and there are just two of you dining, as soon as the dish is ready, put half aside—in two containers, of course, since you’re putting aside two servings—and you’ll have something to pack for work, and it’ll be just the right portion. If it’s a meat dish, it’ll be one serving of meat. If it’s a vegetable and rice casserole, think of it as half a serving of vegetables and half a serving of grains. Easy!
